I bought a book called The Apple Cider Vinegar Cure by Madelyn Given, NC.  It has some really amazing recipes using guess what?  If you guessed Apple Cider Vinegar you are correct.  I really like the book and I found a recipe for Apple Cider Vinegar.  As you know I am trying to be as much of a Zero Waster as I can.  That means I don’t buy stuff in plastic.

I buy the Apple Cider Vinegar in glass which is fine.  But it can get a little pricey and I use vinegar for cleaning so I decided to give it a try.  And boy am I glad I did.  It turned out really good!!  Like REALLY GOOD!!!!

I used organic apples and local raw honey.  So with the raw honey it might get a little pricey but I tell you what the flavor is divine.  But when I get my production up on this I’ll probably try it with organic cane sugar and see how it turns out.  At that point it’s an experiment.  But if I’m using it for cleaning, umm who cares?  I sure don’t.

Ingredients:

  • 3 1/4 Cups Water                                  768 ML
  • 1/4  Cup Local Raw Honey                    59 ML
  • 2 Medium Ripe Apples Cut into chunks or the Scrapes (flesh, peel, cores from 4 apples

Directions

  1. In large glass jar, stir together the water and honey until completely dissolved. Add the Apples
  2. Securely cover the jar with a clean cotton towel or cloth and place it in a warm location. (I put it in my laundry room with my kombucha.
  3. Shake the jar once every day to agitate the ingredients. (I admit it that I didn’t do this.  In fact I didn’t do it at all.  It still turned out awesome.)
  4. After about 1 week, the alcohol fermentation stage will end and the apple pieces will fall to the bottom of the jar.  Strain the apple pieces from the liquid, which is now hard cider and return the cider to a sanitized jar.
  5. Cover the jar with a clean cotton towel or cloth again and place it in a warm location.  After 3 to 4 weeks the vinegar should be ready.  Do a small test and taste test to determine its status.  If it needs more time, wait another week and test it again.
  6. When ready, bottle the vinegar in a sanitized glass bottle with an airtight nonreactive lid.  Store in a cool dark place.

This is a great way to be Zero Waste and also have some delicious vinegar on hand.  You can also use it for cleaning.  I hope you enjoy it as much as I do.

How to Make Soy Milk/Cómo hacer leche de soja

Soy milk has a lot of information in the news regarding whether or not soy milk is healthy for you.  There’s research that says it’s good and bad.  However the bottom line is that you want to ensure that you are eating organic non Genetically Modified Organism (GMO) Soy Beans and then don’t eat it 3 times per day.  Only 1 serving per day is fine.  So maybe just a glass of soy milk or in your cereal is perfect.

3 cups of Soy Beans makes 1 gallon of soy milk.

  1. Soak 3 cups of dried organic soybeans in water overnight or for at least 8 hours
  2. Drain and carefully rinse the soybeans then add them to a grinder or blender and blend until smooth.  If using a blender add some water to aid blending
  3. Pour 1 gallon of drinking water into a large pot and add the blended liquid into it and stir for a few minutes.
  4. Strain the liquid through a muslin cloth and squeeze out the soya milk.  The pulp remaining in the cheesecloth is very nutritious also and can be used in bread making or soups.
  5. Bring the liquid to a boil, then lower the heat and simmer for at least 25 minutes.  Stir it with a wooden spoon to prevent burning.
  6. The soy milk can be enjoyed on its own, or with agave syrup, sugar or vanilla which can be added at this stage to flavor it.
  7. Serve warm or chill and enjoy.

NOTE: SOY milk may foam up quickly to the top of the pot.  If this happens, remove the pot from the heat or turn off the heat for a few moments until it cools a little and the foaming stops.

Making your own soy milk can be a great way to save $$, be Zero Waste and also ensure you aren't getting many of the preservatives that is put in commercial soy milk.  Good job if you do it!! But if you do

Olive Oil Tamales [Vegan]

Tamales are made by steaming masa, a corn-based dough, inside a corn husk until tender. Traditional tamales are made with vegetable shortening, but this recipe substitutes it for extra virgin olive oil. The result is a tender masa with a distinct flavor that pairs perfectly with rich tomato sauce and vegan cheese.

For the Filling:

  • 1/4 onion, chopped
  • 2 garlic cloves, chopped
  • 2 1/2 pounds tomatoes
  • 2 guajillo chilis, stemmed and seeded
  • 1 1/2 tablespoons vegetable stock powder
  • 2 tablespoons extra virgin oil

For the Dough:

  • 2 cups tamale-grind masa harina (corn flour)
  • 1 tablespoon baking powder
  • 1 tablespoon salt
  • 2/3 cup extra virgin olive oil
  • 1 1/4-1 1/2 cups vegetable broth

For Assembly:

  • 1 package dried corn husks
  • Vegan cheese

Preparation

  1. Soak the corn husks in hot water for 30-45 minutes.

To Make the Filling:

  1. Heat 1/2 tablespoon of olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until they begin to brown, about 5 minutes. Transfer to a blender.
  2. Add the tomatoes, chiles, tomatoes, and the vegetable broth to the blender and purée until smooth.

3. In the same saucepan, heat the remaining 1 1/2 tablespoons of olive oil over medium-high heat.

4. Add the chile-tomato mixture and cook, stirring regularly, until it has darkened in color, 4 minutes. You can add a little bit of vegetable broth to thin the purée to a sauce-like consistency.

5. Lower the heat, and simmer, stirring occasionally, until the color deepens slightly and the consistency is smooth, around 10-15 minutes, adding more broth as needed. Season to taste with salt and pepper. Reserve.

To Make the Dough:

In the bowl of a stand mixer, mix the masa harina with the baking powder and salt.
Using the paddle attachment, gradually start adding the olive oil. When the dough starts to form, gradually add the vegetable broth.
The dough should be tender and fluffy, but it should keep its form.
Add more broth if the mixture seems too dry, 2 tablespoons at a time.

To Assemble:

1.Thinly slice the vegan cheese
Wipe a soaked husk dry and put it smooth side up on a work surface.

2. Trim the bottom with scissors so the husk can lie mostly flat. Put about 1/3 cup masa harina in the center of the widest portion of the husk.

3. With your hands, spread it evenly over two-thirds of the husk, leaving a 2-inch border at the narrow top end of the husk.

4. Put 1-2 tablespoons of the tomato sauce in the center of the masa, about 1/2-inch from the wide end. Add 1-3 strips of vegan cheese.

5. Fold the corn husk in half, lengthwise, so the edges meet and the filling is completely covered.

6. Fold up narrow end up husk, leaving wide end of tamale open. Repeat with the remaining ingredients, until all the dough has been used.

7. Fill a deep pot, fitted with a steamer insert, with enough water to reach just below the insert.

8. Cover and bring to a boil over high heat. Arrange the tamales upright (open end up) in the insert, leaving room for the steam to circulate.

9. Fit the insert into the pot over the boiling water. Cover the pot with a lid, and steam for 60-90 minutes. Check the water level frequently and add more as needed to keep the pot from going dry.

10.To test for doneness, carefully, remove a tamale from the pot, and let it cool for a few minutes. Unwrap it, if ready, the dough should be set and will pull away from the corn husk easily.

11. Let the tamales rest for 5-10 minutes before serving, to allow the masa to firm up.

12. Serve the tamales in their wrappers with extra sauce on the side.

Here’s a master list to use when you’re stocking up on healthy ingredients and essentials. Filling your kitchen with healthy foods makes cooking delicious dishes a pleasure, not a chore. Although it looks like a long list, it’s worth it to stock up on condiments and frozen goods, since they will last for a long time.

1. Staple Vegetables

For vegetables, stock up on carrots, celery, beets, and bell peppers, because they have a better shelf life than other vegetables. You can use them in stews, for making stock, with dips as a snack, and in a lot of other types of recipes.

2. Staple Fruits

For fruit, stock up on apples, grapes, berries, and pears. These last a long time in your fridge, and are good for snacking or in oatmeal and baked goods.

3. Greens Like Lettuce, Spinach, and Kale

Fresh greens are always good for making a quick salad or for steaming or sautéing. You can also throw them in stews, soups, and healthy scrambles.

4. Fresh Herbs

Fresh herbs add flavor and freshness to almost any recipe you’ll make. My favorites are cilantro, parsley, thyme, sage, dill, and rosemary. If the herbs are damp, then wrap them in a dry paper towel before storing; if dry, wrap them in a damp paper towel before storing.

5. Dates and Dried Fruit

It’s always a good idea to have dates and other dried fruits in your fridge. Keep your favorites on hand, whether they’re raisins, dried figs, dried apricots, currants, or cranberries. You will get a lot of use out of a small amount in place of sweeteners and in baking.

6. Nuts and Seeds

We use them sparingly at Forks Over Knives, but nuts are good to have in case you don’t have nut milk—you can quickly make some nut milk at home. You can also use nuts and seeds to garnish your salads or main dishes.

7. Plant-Based Milks

Stock up on any plant-based milk that you like, whether it’s almond, soy, rice, cashew, hemp, or rice milk. You can always use it in breakfast cereals, for making baked goods, and in any dish that requires a creamy texture. Just like with nuts and seeds, please use sparingly.

Good quality store-bought salsa makes cooking easier, as you can use it in main dishes and as a dip or a dip ingredient.

It tastes much better than store-bought

Wine vinegars, whether red or white, are a ubiquitous ingredient in salad dressings, sauces, stews, and slow-roasted dishes. And, it is easy enough to pick up a bottle at your supermarket, but, as with most food products, a homemade version tastes better than a mass-produced, store-bought. Homemade wine vinegar will be stronger and more concentrated, with a more delicate, but complex flavor. This will not only improve the taste of your recipes, but homemade wine vinegar also makes a nice gift.

And it’s quite simple to make. (You may have even accidentally made wine vinegar in the past by leaving out an opened bottle of wine too long!) To start, you will need a good-quality wine (red or white) that’s not too strong (about 10 to 11 percent ABV); too much alcohol inhibits the activity of the bacteria that transform the wine into vinegar. On the other hand, if the alcohol content is too low, the vinegar won’t keep well. Depending on how much wine vinegar you’d like to make will determine the method you use.

Make 1 Bottle

The easiest way to make your own wine vinegar is to leave an open, 3/4-full bottle of wine in a warm place for a couple of weeks. It’s really that simple—the natural oxidation process will do all of the work. The only issue you may encounter is fruit flies. To avoid this, place a small piece of cheesecloth over the opening of the bottle.

 Make a Steady Supply

To make larger amounts of wine vinegar you will need what is called a “mother” vinegar. This fermenting bacteria culture turns alcohol into acetic acid (in combination with oxygen) and can be purchased as “live” or “mother” vinegar or simply as an unpasteurized vinegar. You can also make your own mother vinegar by combining wine and vinegar and leaving it to ferment.

For a constant supply of vinegar, pour 1 quart (4 cups) of wine and 1 cup of the mother vinegar into a wide-mouthed glass jug with at least 1-gallon capacity. Cover the container with a piece of cheesecloth secured with a rubber band. In a couple of weeks, the live vinegar will have settled to the bottom of the jug, while the vinegar above it will be ready for use. Add more wine as you remove vinegar for use, to keep the level in the jug constant.

Make Large Batches

If you want to make wine vinegar in larger batches, you will need a 1-gallon glass or ceramic cask that has a spigot at one end. If it’s new, rinse it with vinegar and let it dry. Next, fill it to within a couple of inches of the top with wine and place it, covered with cheesecloth, in a location that’s about 68 F (20 C). In a couple of weeks, the wine will be vinegar. Drain it from the cask using the spigot. Replace the vinegar used with more wine, adding it into the cask through a hose or a funnel, so as to leave the mother undisturbed.
