What is Cilantro Pesto?

Cilantro Pesto is Pesto made with Cilantro instead of the traditional basil. Here is a recipe if you want to try a great vegan pesto made with basil.

Save Money to using Cilantro instead of Basil

One day I wanted to make pesto but the basil was just so expensive and it was in plastic so I decided to try it with cilantro instead and boy am I glad I did. Cilantro has many health benefits. It detoxifies heavy metals and so I’m eating as much cilantro as I can.

Another thing I learned too is you can substitute other nuts in the pesto as well. Say you don’t have pine nuts, you can use cashews or hemp seeds. It’s quite forgiving. Recently I started not following a recipe and so far so good. Once you have the basic recipe down you can swap out different nuts and different trees to get a different taste. I made one with spinach and cilantro that turned out very good.

My friend Farrah who is an excellent chef and blogger gave me the idea about the spinach and cilantro and then we made a lasagna with vegan mozzarella that was so good. I made some for a friend after that and let’s just say I think I have a friend for life.

Recipe Cilantro Pesto

  • 2 cups tightly packed fresh cilantro ( I used a whole bunch with stems
  • 1/2 cup walnuts or pine nuts ( I substituted cashews and hemp seeds)
  • 1 to 2 cloves of garlic (I use 4 but I love garlic. Pile it on it’s good for you)
  • 1/2 cup extra virgin olive oil, salt and freshly ground pepper for taste and 1 tablespoon lemon juice
  • 3 tablespoons nutritional yeast

The directions are so easy. Put all ingredients in a blender, slowly work it up to high and then it will puree. I have a vitamix which works really well

Wasn’t that easy?

The hardest part is going to the store and buying everything and then washing everything to make the pesto. But now you can put it on pasta or any grain is really delicious. Freshly made Quinoa, rice or you can make a lasagna out of it. You can also use it instead of mayo on a sandwich. The possibilities are endless.
